

Cut the aubergine and bell peppers into thin slices and lightly grill in a non-stick pan or roast in the oven with a little olive oil.
Spread the dough on a baking tray, and add the grilled vegetables and olives.
Crumble the Feta PDO and distribute evenly over the pizza.
Sprinkle with oregano or thyme and a pinch of pepper, if so desired.
Preheat the oven to 200°C and bake for 15–20 minutes, until the dough is cooked and the ingredients are golden brown.
Once out of the oven, add fresh basil leaves and serve.
