Stuffed Peppers with Feta PDO

Ingredients (for 4 people)

  • 5 peppers (seeded)
  • 400 g Feta PDO
  • 120 g grated graviera
  • cheese
  • 1 tomato, finely chopped
  • 1 tomato, grated
  • 2 garlic cloves
  • 10 mint leaves
  • ½ bunch fresh dill
  • Olive oil
  • Salt
  • Black pepper
  • Dried oregano

Process:

In a bowl, crumble the feta into large pieces. Add the graviera cheese, chopped tomato, black pepper, and dill. Mix well.  In a baking dish, combine the grated tomato with the garlic, oregano, salt, pepper, and olive oil.  Add the mint leaves whole and gently stir.  Stuff the peppers with the filling and place them in the baking dish.  Brush the peppers with a little of the tomato sauce and drizzle with olive oil.  Bake in a preheated oven at 180°C / 350°F for 35 minutes.
